What should i notice when i go to China minority nationality regions?

I have heard that China has many minorities and they have different customs. They will be unhappy when you take some "unpolite" behaviors. So, I want to know information about it, i want to have an enjoyable trip. Oh, especiall in Southwest China. Thank you for every answer.
